CHIA PANCAKES - VEGAN


Hello there! How are you? I hope Monday is treating you well. Me? Oh well, it could be better. On Friday my boy left and went on a tour with his band through Austria, Germany and Belgium all the way to England (they are a punk rock band and if you like that kind of music, you should check them out, cause they are awesome! Just click here: Start At Zero). So I'm at home and gonna be here most of the week. But I decided that these 10 days are perfect to try something, I normally wouldn't. I'm going vegan. For now it's just a challenge, to see, if I can stick to it, but if I'll like it ... well, who knows. ;)

And even though it's only been 3 days, I already have a recipe that I want to share with you (I adopted the recipe from here). Vegan pancakes. No cow milk, no eggs, no butter. Yeah, no animals or animal products in here. But they are still the best "American" pancakes I have ever made and ate. Seriously. I couldn't believe the fluffiness when I tried the first pancake. And of course I had to eat like 6 more of them after that. Yummmmmmm! :3

But, how can you make pancakes without eggs, you ask me. The secret is: chia seeds. They act as eggs and tie everything together.

You will need (I made approximately 15 pancakes):

  • 1 cup whole wheat flour (250ml)
  • 1/2 cup regular white flour (125ml)
  • 2 tablespoons sugar
  • 1 tablespoon baking powder (13g or 1 whole package)
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 + 1/2 cups rice milk (375ml)
  • 2 tablespoons chia seeds
The procedure:
First mix all the dry ingredients. Add the vanilla extract and rice milk and mix again. Add the chia seeds, mix well and let the mixture rest for 5 minutes, so the chia seeds moist (or expand or whatever they do in moist environment ... damn, that sounds so professional haha).

Use a non-stick pan (so you won't need any additional fat) and put the stove on low heat (well, medium, a little bit lower than the heat you usually use for making pancakes ... so the pancakes won't burn that easily ... but it takes just a second or two longer to make them ... be patient, they are worth it!). When they are golden brown on one side (the bubbles will form, but they form before the pancake is done, at least they did in my case, so they don't help a lot), turn them around and bake them on the other side too. Don't make them too big, cause it will be harder to turn them, because they are soooo fluffy.

And that's all, folks. I topped them with peanut butter and banana. You can also use any other (vegan or not) topping. They go with everything. Hope you'll like them. :)

Jupi! Tokrat mi je pa uspelo. Prestala sem 7-dnevni no junk food izziv. In zelo sem ponosna nase. Na trenutke je bilo precej težko, predvsem ker sem velikokrat pred sabo imela grešno hrano in sem ji morala odločno reči ne. Vednar sem bila močna, in končno mi je uspelo. Zahvale gredo knäckerbrödu, ki sem ga imela za nadomestek kruhu, vsemu mogočemu svežemu in suhemu sadju, ki je nadomeščalo sladke stvari, oreškom, ki so nadomeščali čips ter seveda Nini, ki me je vzpodbujala, da sem ostala na pravi poti. :)

Izziv priporočam vsem, ki ga še niste, v kolikor se res težko uprete sladkarijam in čipsu in podobnemu, pa še toliko bolj. Poročajte kako bo šlo. Danes bom uživala v nagradi v obliki pizze, kar seveda ni ravno pametna ideja, ampak res sem si jo zaželela. In po celem tednu zdrave hrane se niti ne bom počutila tako kriva, ko jo bom zmazala. Upam.

Yes! I succeed this time. I passed the 7 days no junk food challenge. I am really proud of myself right now. I have to admit it was hard sometimes, specially because sometimes I had the sinful food in front of me and I had to say no to it. But I stayed strong and I finally succeeded. I have to give thanks to knäckerbröd for being a replacement for bread, all the fruit, fresh and dried, for being a replacement for sweets, nuts for being a replacement for chips and of course to Nina, for supporting me and keeping me on the right track. :)

I recommend the challenge to all of you that haven't tried it yet, if you really can't say no to sweets and chips, even more then. Report back how it went. I'm gonna reward myself with a pizza today, which is not really a good idea, but I'm really craving for it. And after a whole week of "nice" food I think I won't feel so bad eating it. At least I hope so.

NO JUNK FOOD AGAIN?

Zavedam se, da so moji posti trenutno kot neki kriki iz tišine, ampak, ko dobim kako idejo poskušam najti čas za objavo le te, ko bo pa čas za kaj več povedat bom pa, kot sem že obljubila, poročala čisto o vsem (da domačih ne bo skrbelo kaj delam tukaj).

V glavnem, ko sem tatu pred približno pol ure poslala to sliko me je vprašal, če delam sadni teden. Pošteno sem se nasmejala, ker jaz samo s sadjem preprosto ne bi preživela. Potrebujem sir. In pašto. Ampak, mi je pa dal idejo. No junk food week. Ponovno. In tokrat upam, da tudi uspešno. Tako da ja, spet teden zdrave hrane. Tokrat se mi zdi da sem celo malo bolj motivirana. Mogoče je kriv ogromen krožnik sadja, ki sem ga spravila vase ravnokar, ali pa kaj drugega. Ne vem. Ampak zdi se mi, da tokrat pa bo šlo. Še posebej zato, ker je nujno treba narediti malo praznine v želodcu in v oblekah, saj že vidim kako naporni bojo (v smislu koliko hrane bo potrebno pojest) naslednji trije tedni. No, držite pesti da mi uspe.

I know that my post right now look like screams from silence, since there is no obvious logic to them, but the reason is that when I get an idea I try to post it as soon as I can, so I don't lost it. Of course, when I finally have the time to post a long post about all the things I have been doing here last weeks, I will do that (so my relatives won't worry about me mainly).

But more importantly, when I sent this photo to my dad half an hour ago, he asked me if I am doing a fruit week. I just laughed, cause I know I wouldn't survive with only fruit the whole week. I need cheese. I need pasta. But even so, he gave me an idea to retry my no junk food week challenge. Again. I hope successfully this time. So, there is a healthy food week ahead of me. I kind of feel more motivated than the last time, maybe just because I just ate a whole plate of fruit and I feel as full as one can feel, or just because it's a challenge and I want to pass it. I really do, specially because next three weeks are going to be hard for ma stomach and I need to prepare for that. So, keep your fingers crossed I pass the challenge this time.

TIME FOR PANCAKES

Čas za drugo stvar s seznama: palačinke. Tokrat ne bom pisala recepta, saj vas verjetno veliko dela palačinke po svoje poleg tega pa je verjetno nešteto receptov objavljenih na spletu. Povedala bom samo, s čim sem jih nafilala.

Leva:
1 banana
20 gramov hrustljavega arašidovega masla (velika žlica približno)

Desna:
1 jabolko
10 gramov rjavega sladkorja (majna žlička približno)
Cimet

Pri levi sem samo namazala arašidovo maslo in nato lepo narezane kose banane razporedila po vrhu. Pri desni sem pa vse vrhla v ponev in najprej malo popekla, nato pa dala v palačinko. Super kosilo, spet. In še ena stvar črtana s seznama.

It's time for the second thing from the list: pancakes. I won't write the recipe for the pancakes, cause everybody does them differently and there are also many different recipes posted on the internet which you can use. I'm just going to tell you what I put into them.

Left:
1 banana
20 grams of crunchy peanut butter (one tablespoon approximately)

Right:
1 apple
10 grams of brown sugar (one teaspoon approximately)
Cinnamon

I just spread the peanut butter over the left one and added the cut-into-pieces banana. And for the right one I put all the ingredients into a pan and baked them for a little bit and then I filled the pancake with the mixture. Another delicious lunch. And another thing checked from my list.

CHEAT DAY

Hejhej! Kako kaj na to jesensko nedeljo? Sedaj, ko sem opravila svoj jutrani ritual (zajtrk, bloglovin, kava), sem rekla, da moram napisat kaj na blog. Nekaj na hitro, saj me knjiga Swedish Legal System že čaka, odprta na delovno pravo, ki je na meniju to dopoldne.

Hejhej! How are you on this autumn Sunday? Now, that I did my morning ritual (breakfast, bloglovin, coffee), I decided to write something on my blog. Someting short, because the book Swedish Legal System is already waiting for me, opened on the Labour Law chapter, which is on the menu this morning,

Povzetek tedna: V ponedeljek sem šla na krajši sprehod po Malmötu, saj sem si morala kupit karto za petkov koncert. Poleg tega, da sem šla v Folk å Rock, ki je založen s kupom CDjev in plošč in kjer sem kupla karto, sem se še malo sprehodila po drugih trgovinah, tako da sem malo spraznila denarnico. V torek smo imeli na faksu opozicije esejev (prebrat in komentirat smo morali esej od nekoga drugega) in če sklepam po komentarjih mojega nasprotnika IN profesorice, mi ni treba skrbeti glede tega, kakšen je moj esej. Naj bi bil super. V torek sem tudi dobila rezultate izpita iz švedščine, ki so bili super po mojem mnenju. Drugače pa samo učenje in dobra zdrava hrana.

Summary of the week: On Monday I went for a short walk in Malmö, because I had to buy the ticket for the concert on Friday. I went to Folk å Rock, filled with CDs and LPs, where I bought the ticket, and in some other shops and spend a little money. On Tuesday we had to present our oppositions (we had to read and comment on a essay from someone else from the course group). Judging by all the comments, my essay is ok, so I don't have to worry about it. I also found out that I passed my Swedish exam, yay! Otherwise, the week was full of studying and good healthy food.

The Royal Concept koncert: Ne bom izgubljala besed. Koncert je bil SUPER. Točno to kar mi je primanjkovalo zadnje čase (dobra glasba v živo). Tudi ljudi je bilo ravno prav in nihče se ni gužval kaj preveč, kot je to navada pri nas. Edina slaba stvar je bila ta, da je koncert ob 10ih že končal (kljub temu, da je bila tudi predskupina, ki pa je začela že ob 8ih in igrala samo pol ure). Ampak na srečo smo se po koncertu preselili v bližnji bar/diner/karkoli, in se še tam malo podružli.

The Royal Concept concert: I won't say much. The concert was AMAZING! Exactly what I was missing, great live music. There weren't too much people, which was good. The only bad thing was that the concert already ended at 10PM. But luckily we moved to another bar/diner/whatever afterwards and hung out a little bit more.

No Junk Food Challenge: Na žalost, ni uspel. Pa ne da ne bi zdržala, ker mi je manjkalo sladkega ali mastnega, ampak, v petek, ko smo bili v baru, je nekdo prinesel bombone na mizo, in jaz sem seveda popolnoma pozabila na challenge in navalila na njih. Po enih 10ih nepravih M&Mih, sem se spomnila na challenge in se hitro ustavila. Seveda potem nisem pojedla nobenega več, ampak ja, challenge je bil neuspešen. In seveda sem si včeraj privoščila cheat day, tako da sem za kosilo pojedla nekaj belega kruha in za večerjo uživala ob vroči čokoladi in Metkinem pomarančnem pecivu. TODA, ker mi je bil challenge zelo všeč, ker sem bila zelo ponosna nase, da se sploh ni bilo težko odpovedat vseh mogoči "nezdravi" hrani čez teden, sem se odločila, da bom kar vztrajala pri tem. Mogoče ne 7 dni od danes dalje, ampak bom vzela Metkino idejo o tem, da lahko sladko in nezdravo ješ samo za vikend (jaz bom dala še dodatno omejitev in to je: samo en dan v vikendu). Seveda pa, če bom zdržala celih 7 dni (ali več) brez nezdrave hrane, bom štela challenge kot opravljen. Kot običajno, sem hrano slikala, tokrat še več, saj je bila to nekakšna motivacija zame, ker sem na koncu dneva lahko točno videla, kaj sem pojedla.

No Junk Food Challenge: Unfortunatelly, I failed. But not because I missed the junk food and had to had it. No. The reason is that I forgot that I am doing the challenge and when one guy brought a bunch of candy on a table in the bar after the concert, I started eating them and it was only after let's say 10 fake M&M's that I remembered about the challenge. I of course stopped eating them then, but the challenge was failed. And then I made yesterday a cheat day, so I ate some white bread for lunch and some hot chocolate and Metka's orange "cake" for dinner. BUT, because I really liked the challenge and was really proud of myself cause it wasn't that hard to give up the "unhealthy" food, I decided to still stick to it. Maybe not for 7 days starting from today, but I am gonna try Metka's idea about eating sweets and junk food only on weekend (I am gonna limit it even more, only 1 day in the weekend). And of course, if I won't eat any junk food for 7 days straight, I will count the challenge as done. As usually, I took a lot of photos of my food, which was actually a motivation, because I could see everything I ate at the end of the day.

NEW WEEK. NEW DESIGN.

God morgon! Kot lahko vidite, je blog spet dobil nekoliko drugačno obliko. Tokrat nisem samo copy-pastala brezplačen template, ampak sem se celotnega procesa lotila kar sama, in zato tudi zgubila nekaj ur spanja (spat sem šla ob 2.30, kar je povsem neobičajno zame), ampak sem trenutno tako zadovoljna z izgledom, da se sploh ne sekiram glede izgubljenih ur. Kako vam je všeč nov izgled?

God morgon! As you can see, my blog just got a new design. This time I didn't just coppied a pre-made free template, but I decided to design it on my own. I have to admit that I lost some hours of sleep because of it (I went to bed at 2.30AM, which is really unusual for me), but I love the design so much at the moment, so I'm not worring about the lost hours at all. How do you like the new design?

Ker pa samo nov design ni dovolj, je potrebno še kaj "zraven dat", da lahko res rečem da je pred mano nov teden. Odločila sem se, da bom ta teden opravila 7 Days No Food Challenge, ker sem se včeraj ob pogledu v ogledalo pred tuširanjem malo ustrašla sama sebe, tako da je potrebno nekaj konkretno spremeniti pri moji prehrani. In to bo dober začetek. Za konec pa še včerajšnje kosilo, ki sta ga pripravila Miha in Metka, ter današji zajtrk, ki je posladkal deževno ponedeljkovo jutro v Malmötu.

But because the design by itself is not enough, I also decided to do something else, so I can really call this week a new week. I decided to do the 7 Days No Food Challenge, because I almost screamed when I saw myself in the mirror yesterday before taking a shower. I really have to change my food habits here, and I think this is a great start. Of course, here are some pictures: my yesterday's lunch, made by Miha and Metka, and today's breakfast, which made my rainy Monday morning in Malmö much sweeter and brighter.

P.s.: Ja, potrudila se bom, da bom od sedaj naprej (ker bom imela po mojem več časa), pisala tudi v angleščini, za vse moje tuje prijatelje tukaj, ki mi konstantno dajajo pripombe na to temo. Yes, I will try from now on to write in English too for all my foreign friends here, who are constantly complaining about the language in my posts. ;)
