CHIA PANCAKES - VEGAN


Hello there! How are you? I hope Monday is treating you well. Me? Oh well, it could be better. On Friday my boy left and went on a tour with his band through Austria, Germany and Belgium all the way to England (they are a punk rock band and if you like that kind of music, you should check them out, cause they are awesome! Just click here: Start At Zero). So I'm at home and gonna be here most of the week. But I decided that these 10 days are perfect to try something, I normally wouldn't. I'm going vegan. For now it's just a challenge, to see, if I can stick to it, but if I'll like it ... well, who knows. ;)

And even though it's only been 3 days, I already have a recipe that I want to share with you (I adopted the recipe from here). Vegan pancakes. No cow milk, no eggs, no butter. Yeah, no animals or animal products in here. But they are still the best "American" pancakes I have ever made and ate. Seriously. I couldn't believe the fluffiness when I tried the first pancake. And of course I had to eat like 6 more of them after that. Yummmmmmm! :3

But, how can you make pancakes without eggs, you ask me. The secret is: chia seeds. They act as eggs and tie everything together.

You will need (I made approximately 15 pancakes):

  • 1 cup whole wheat flour (250ml)
  • 1/2 cup regular white flour (125ml)
  • 2 tablespoons sugar
  • 1 tablespoon baking powder (13g or 1 whole package)
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 + 1/2 cups rice milk (375ml)
  • 2 tablespoons chia seeds
The procedure:
First mix all the dry ingredients. Add the vanilla extract and rice milk and mix again. Add the chia seeds, mix well and let the mixture rest for 5 minutes, so the chia seeds moist (or expand or whatever they do in moist environment ... damn, that sounds so professional haha).

Use a non-stick pan (so you won't need any additional fat) and put the stove on low heat (well, medium, a little bit lower than the heat you usually use for making pancakes ... so the pancakes won't burn that easily ... but it takes just a second or two longer to make them ... be patient, they are worth it!). When they are golden brown on one side (the bubbles will form, but they form before the pancake is done, at least they did in my case, so they don't help a lot), turn them around and bake them on the other side too. Don't make them too big, cause it will be harder to turn them, because they are soooo fluffy.

And that's all, folks. I topped them with peanut butter and banana. You can also use any other (vegan or not) topping. They go with everything. Hope you'll like them. :)

NUTELLA-GLAZED MINI CINNAMON DONUTS

Even the name looks yummy ...

Ok so, my lovely brother brought me a mini-donuts baking pan from Sweden (I ordered two really cute jars with straws - perfect for smoothies and cocktails ... mmmm gotta try that. Everything is from a shop called Lagerhaus). And of course I had to try it out and bake some mini (actually miniature) donuts. I searched for the recipe on Google and kind of picked the first one I got, but I changed it a little bit (since Christmas is just a few days away). Also, I felt like adding Nutella, so I made a delicious Nutella glaze for them (also from the internet, but modified).

Donuts (around 40 servings):
  • 150 g of All-purpose flour
  • 1 tsp of Baking powder
  • 1/2 tsp of Salt
  • 110 g of Brown sugar
  • 1 tsp of Cinnamon
  • 1/2 tsp of Nutmeg
  • 120 ml of Milk
  • 2 Eggs
  • 20 g of Butter (melted)
  • 2-3 drops of Vanilla extract
Pre-heat the oven to 160°C. In one bowl mix the flour, baking powder, salt, brown sugar, cinnamon and the nutmeg. In the other bowl combine the milk, eggs, melted butter (I melted it in the microwave) and vanilla extract and mix well. Then slowly add the "wet mixture" to the dry one and mix well. Butter up the baking pan (the donuts shouldn't stick than ... well, mine still kind of did) and fill the holes with the mixture - make sure they are only 3/4 full, cause the donuts will gain in size and if they raise up too much, the hole in the middle will disappear. Bake them for 12-15 minutes (use a toothpick to see if they are baked through and through). Wait for them to cool down a little bit.

Nutella glaze:

  • 1/3 cup (75 ml) of Powdered sugar
  • 1 big spoon of Nutella
  • 1-2 spoons of Milk (first add one and if the mixture is too dry add the other one)
  • 1 drop of Vanilla extract
Mix all the ingredients well. Dip the upper side of each donut into the glaze, place them on a plate and wait for them to dry a little bit (or not, it depends how strong is your will :P).

And that's it. :)

The donuts were perfect for breakfast. With a cup of coffee and a glass of elderflower yoghurt. Yummmmmmm. :3

BREAKFAST IDEAS

If you follow me on Instagram, you can tell that most of my photos of food are photos of my breakfasts. Yeah, I love them. They are usually the most colorful and photogenic meal of the day. And since I'm a slow and lazy wake-up-er (is that even a word?!) I probably take more time to enjoy my breakfast than normal people do. And not only that it has to taste delicious, it also has to look good. Oh yes, and a cup of coffee with milk is a must as a side.






Here you have three examples of the breakfasts I eat. I wanted to share them with you, so if maybe some of you are not really breakfast fans, maybe now you will because. Because breakfast is the most important meal of the day (oh, look at me, being a smart-ass here and then eating pizza for dinner). And look at them! They are too cute not to make and eat them! :3

Breakfast 1: 

  • Mixed fruit (this time: banana, pomegranate, blueberries)
  • Vanilla or plain yoghurt
  • (Sometimes) granola
Breakfast 2: 

  • Oatmeal cooked in milk
  • A teaspoon of honey
  • Fruit (strawberries in this case, but most of the time a banana)
Breakfast 3:

  • Banana pancakes (2 eggs, 1 banana)
  • Cottage cheese
  • Blueberries

Do you make breakfasts like this? Do you even have breakfast in the morning or are you one of the even lazier ones that just skip it? And yes, I know I have already talked about breakfast a bunch of times, but ... come on, look at it. :D

PIZZA ALTERNATIVE

I was really craving pizza today for lunch, but since it does not really go with the all "eat healthier" lifestyle, I had to make something different. I decided to put some pesto genovese, light gauda cheese and pine nuts on rye bread, put everything in a warm pan and waited for a few minutes so the cheese melted. Delicious and (quite) healthy. Definitely worth a try. All you need is:

  • 2 pieces of rye bread (or any other healthy or healthier bread)
  • 40 grams of grated cheese (any kind that melts is OK, I used light gauda)
  • 25 grams of pesto genovese (I am eating the Mercator one at the moment, which already has crushed pine nuts in it, but there is never enough pine nuts, so you also need ...)
  • 10 grams of pine nuts

You can also put the pieces into a hot oven and wait for the cheese to melt, but since I don't have an oven here, I just used the pan.

What about the calories, you ask? If my calculations are right (I calculated the numbers from an app I use on my phone) it goes something like this:
470 kcal = 18.5g CH + 21.5g P + 34g F

You can evaluate the numbers by yourself if you want, but for me they don't really mean a lot. At least not before dinner time. That's when I get worried about the low intake of proteins during the day and stuff myself with eggs and cottage cheese. :)

This post is a bit different from food posts until now and I would really love some feedback. Do you like it or not? Do you count calories? Are the nutrition facts even important or should I skip them? I will be happy for any kind of feedback.

SWEET & SOUR


Remember the post about my new year's resolutions? I do. And I know one of them: taking photos with my Canon camera. I didn't get to that until today, just because I didn't have anything to take photos of. And here is my first Canon photo this year. Edited with Picasa.

I made lemon version of my cheesecake (you can get the recipe here), just because it was the weekend and I was feeling like eating it. Of course, as usually, I experimented with something and this time it was the bottom (dough). I used different kind of cookies (Leibniz Cereal Biscuit) and I have to admit that the cheesecake was better than ever, even though I was freaking out, because I didn't know if the bottom is going to stay together or fall apart in the end. Well, it stayed together and it was delicious! I didn't do anything special with the cream, just added a drop of lemon essence and topped the cake with pieces of lemon, as you can see. And that's all. From me. For now.

WHOLEGRAIN


Time to eat healthier. Whole-grain wheat pancakes for example. And a banana and some home-made strawberry jam as a side. Yum!

Used (for 5-6 pancakes):
  • 1 cup of whole-wheat flour (cup = 250 ml)
  • 1 egg
  • 1 cup of milk
  • 3 teaspoons of brown sugar
  • 1 teaspoon of baking soda
I mixed everything in a bowl with a fork. I baked them in a non-stick pan, so I didn't use any butter or oil or any other fat. A healthy and delicious idea for breakfast.

Polnozrnate palačinke so odlična ideja za zdrav zajtrk. Če zraven pojemo še eno banano in malo domače jagodne marmelade so pa še toliko boljše.

Uporabila sem (za 5-6 palačink):
  • 1 skodelico polnozrnate moke (skodelica = 250 ml)
  • 1 jajce
  • 1 skodelico mleka
  • 3 čajne žličke rjavega sladkorja
  • 1 čajno žličko sode bikarbone
Z vilco sem vse sestavine zmešala v skledi. Pekla sem jih na teflonski ponvi in nisem uporabila čisto nič maščobe (masla ali olja).

After handing in my exam yesterday I felt like baking cookies. So I did. I used this recipe: click. Sally's Baking Addiction is becoming my favorite blog I think. These were amazing. Well, they still are. It's worth trying them out.

Po oddaji izpita včeraj sem dobila željo po peki piškotov. In sem jih spekla. Uporabila sem ta recept: klik. Sally's Baking Addiction postaja moj najljubši blog. Piškoti so bili odlični. No, še vedno so. Definitivno se jih splača narediti.

LEMONS CAN BE SWEET TOO


I have to admit I have been thinking about making a lemon pound cake for weeks (or almost months) now, but I never got to it. And since now I have to study for my exam on Friday, I'm doing everything else than studying. Haha, not really true. But I wanted something sweet after lunch, so I tried it out. I divided the recipe with 6 and made 2 really small ones. I left out the frosting (I only used a little bit of powdered sugar), because the cake is fattening enough. Just so you know, it was delicious. You can get the recipe (unfortunately in Slovenian) on Okusno.je.

Že veliko časa sem razmišljala o tem, da bi spekla limonin kolač, vendar se preprosto nisem lotila tega. Seveda sedaj, ko se moram učiti, saj imam v petek izpit, delam vse drugo, samo učim se ne. Hec, hec, se učim. Vseeno pa sem si po kosilu zaželela nekaj sladkega in zato sem naredila dva mini limonina kolačka. Recept sem delila s 6. Preliva za po vrhu nisem naredila, ampak sem uporabila samo nekaj sladkorja v prahu. Kolaček je bil odličen. Definitivno bom še kdaj ponovila to. Recept lahko najdete na Okusno.je.

PASTA WITH TUNA, PEAS & LEMON

Kot sem obljubila, še en recept: testenine s tuno, limonom in grahom. Prirejeno po: Real Simple.

Za enega potrebujemo:
85g testenin
1 majhna konzerva tune
30g graha
1 jedilna žlica olivnega olja
2 jedilni žlici limoninega soka
čajna žlička limonine lupinice
en stok česna

Testenine skuhamo po navodilih na škatli. Olje segrejemo in na njemu malo popečemo sesekljan česen. Dodamo tuno, grah in limonin sok ter počakamo, da se vse malo popraži. Nato dodamo testenine in vse dobro premešamo. Na koncu dodamo še limonino lupinico in vse še enkrat premešamo.

Meni je bila jed zelo dobra in zelo osvežilna. Priporočam.

As I promised, the recipe for pasta with tuna, peas and lemon. Modified from: Real Simple.

For one you need:
85g of pasta
1 small can of tuna
30 grams of peas
1 table spoon of olive oil
2 table spoons of lemon juice
1 tea spoon of lemon zest
1 garlic clove

Make the pasta according to the instructions on the box. Heat up the oil in a pan and fry the chopped garlic in it a little. Add the tuna, lemon juice and peas and wait a little, until everything is a little bit fried. Add the pasta and mix well. In the end add the lemon zest and mix again.

I loved the dish. Very refreshing. I recommend it.

TIME FOR PANCAKES

Čas za drugo stvar s seznama: palačinke. Tokrat ne bom pisala recepta, saj vas verjetno veliko dela palačinke po svoje poleg tega pa je verjetno nešteto receptov objavljenih na spletu. Povedala bom samo, s čim sem jih nafilala.

Leva:
1 banana
20 gramov hrustljavega arašidovega masla (velika žlica približno)

Desna:
1 jabolko
10 gramov rjavega sladkorja (majna žlička približno)
Cimet

Pri levi sem samo namazala arašidovo maslo in nato lepo narezane kose banane razporedila po vrhu. Pri desni sem pa vse vrhla v ponev in najprej malo popekla, nato pa dala v palačinko. Super kosilo, spet. In še ena stvar črtana s seznama.

It's time for the second thing from the list: pancakes. I won't write the recipe for the pancakes, cause everybody does them differently and there are also many different recipes posted on the internet which you can use. I'm just going to tell you what I put into them.

Left:
1 banana
20 grams of crunchy peanut butter (one tablespoon approximately)

Right:
1 apple
10 grams of brown sugar (one teaspoon approximately)
Cinnamon

I just spread the peanut butter over the left one and added the cut-into-pieces banana. And for the right one I put all the ingredients into a pan and baked them for a little bit and then I filled the pancake with the mixture. Another delicious lunch. And another thing checked from my list.

SPINACH GRILLED CHEESE

Očitno izzivi, kjer moram hrano kuhati in jesti in ne paziti kaj točno jem in se odrekati nekaterim grešnim zadevam, niso tak problem zame. Včeraj za kosilo sem že preizkusila prvo stvar iz moje prejšnje objave: Popečen sendvič s špinačo, pinjolami in mozzarello. Dejansko je to toast no. Nisem ravno strokovnjak za prevajanje hrane iz angleščine očitno. Torej, ne bom več nakladala. Recept sem dobila tukaj. Seveda, sem ga priredila malo po svoje, kot vedno. Bilo je enostavno in odlično kosilo! Še posebej za vse tiste, ki ste oboževalci takšnih in drugačnih sirov (kot sem jaz). Upam, da bom koga prepričala s to odlično (zelo redilno) zadevo, in da jo boste preizkusili. Jaz ga bom definitivno naredila še kdaj.

Uporabila sem:
2 kosa kruha (raje kot francosko štruco, ki sem jo jaz uporabila, ker je slučajno ostajala, uporabite kak večji kruh)
25 g špinače
50 g mozarelle
0,25 dl pinjol
velika žlica olivnega olja
maslo

Priprava (bolj eksperimentiranje):
Špinačo sem najprej popekla na olivnem olju, nato pa jo, ko se mi je zdela dovolj popečena, zalila z vodo, da se je skuhala (prvič sem delala tako špinačo, tako da nisem imela pojma kaj točno delam). Ko je voda izparela sem v ponev stresla še pinjole in jih malo popekla. Kruh sem na zunanji strani namazala z maslom. Nato pa sem v sredino naložila vse sestavine (skuhana špinača, na koščke zrezana mozzarella in popečene pinjole). Sendvič sem nato dala v ponev in ga na nizki temperaturi popekla na obeh straneh, ravno toliko, da se je sir lepo stopil. Mogoče bi ga lahko malo več, da bi lepo dobil malo več barve in skorjice na obeh straneh. Nasvet za drugič, ko ga bom delala.

I guess I don't have problems with challenges, where I have to make and eat food like I have with challenges where I have to say NO to food, specially the fattening one. I made the first thing from my last post for lunch yesterday: Grilled Cheese with Spinach, Mozzarella and Pine Nuts. I go the recipe here. Of course I altered it a little, as I usually do. It was an easy to make and delicious lunch. Specially for those, who are in love with al sorts of cheese (like I am). I hope I will convince some of you to try this recipe. I will definitely make it again sometime in the future.

I used:
2 pieces of bread (it's better to use a bigger one than I did - we had some French loaf left, so I had to use it)
25 grams of spinach
50 grams of mozzarella
0,25 dl of pine nuts
tablespoon of olive oil
butter

The making (it was more of an experiment):
I first fried the spinach on the olive oil in a pan a little bit and then, when I felt like it was done enough, I added water and waited that it all boiled out (it was my first time doing thing, so I didn't really know what I was doing). After that I added the pine nuts and baked them in the pan for a little bit. I spread the butter on the outer side of the bread pieces. Then I added all the ingredients in the middle (cooked spinach, cut into pieces mozzarella and a little bit roasted pine nuts). I put the sandwich into the pan and roasted it on low temperature on both sides. I probably should roast it a little bit more, so it would turn a little bit brown, but I was too hungry so I just waited for the cheese to melt. An advice for the next time I make it.

PALEO PANCAKES

Uf, ta teden si pa kar privoščim. V ponedeljek in torek sem imela faks, tako da sem dneve preživljala predvsem za knjigami ter v knjižnici z ostalimi člani pogajalske skupine (jutri imamo v okviru predmeta Konkurenčno pravo EU in postopek simulacijo pogajanj in se je bilo potrebno pripraviti malo). Po dveh študijskih dneh pa sem privoščila dva dneva zase, shopping in hrana. Kam češ lepš. Včeraj v Lundu (Nova), danes pa v Malmotu (Emporia). Seveda sem tudi kupila par reči in tako odkljukala nekaj stvari z moje liste želja.

Trenutno pišem blog zato, ker čakam da se spečejo moji browniji. Sem pa danes tudi nekaj drugega preizkusila. Pred nekaj dnevi sem zasledila zanimiv recept za paleo palačine. Ker vem, da verjetno veliko ljudi ne ve kaj pomeni tisti paleo pred palačinkami, je tukaj definicija z Wikipedije:
PALEOLITHIC DIET (Wikipedia): The paleolithic diet, also popularly referred to as the caveman diet, Stone Age diet and hunter-gatherer diet, is a modern nutritional plan based on the presumed ancient diet of wild plants and animals that various hominid species habitually consumed during the Paleolithic era.
Torej, bistvo je, da ješ kar so jedli praljudje = nič predelane hrane. Samo tisto, kar lahko uloviš ali nabereš. Upam, da sem prav razumela. Ampak da se ne bo kdo ustrašil, ne, ne delam nobene diete, samo recept mi je bil zanimiv in zato sem ga hotela sprobat. Dobila sem ga na blogu Bukla na Buklo.

Original recept. Moj recept:
2 jajci
1 banana
malo cimeta
kokosovi kosmiči

Banano sem zmečkala. Jajce sem zmešala in dodala banani. Nato sem dodala še cimet in kokos. Naredila sem več majhnih palačink v teflonski ponvi. Ker sem seveda preveč sladkosneda, sem kot prilogo uporabila dulce de leche (se mi zdi, da ne paše v paleo dieto). Hihi. Ampak ja, zelo preprost recept za zelo odličen obrok (najbrž bolj za zajtrk kot za kosilo). Priporočam.

I'm really enjoing this week. On Monday and Tuesday I had some classes, so I spent my days behind books or in the library with other members of my negotiation group (tomorrow we have a negotiation simulation within our EU Competition and Procedure Law course, so we had to prepare ourselves for that). After two study days, I took two days for myself. Shopping and food. What else do you need. Yesterday in Lund (Nova) and today in Malmö (Emporia). Of course I bought some thing and check some stuff of my wish list.

I'm writing this post while waiting for my brownies to bake. But I also tried something else today. A few days ago I came across a recipe for Paleo Pancakes. Since not everybody knows what that paleo word in front the pancakes means, I got the definition from Wikipedia:
PALEOLITHIC DIET (Wikipedia): The paleolithic diet, also popularly referred to as the caveman diet, Stone Age diet and hunter-gatherer diet, is a modern nutritional plan based on the presumed ancient diet of wild plants and animals that various hominid species habitually consumed during the Paleolithic era.
So the general idea is that you only eat what cavemen ate = no processed food. Only the stuff you can catch or pick. I hope I got that right. But don't worry, I'm not on a diet or anything, I just thought the recipe was interesting and I wanted to try it. I found it on a blog called Bukla na Buklo.

Original recipe. My recipe:
2 eggs
1 banana
a little bit of cinnamon
coconut flakes

I mashed the banana. Mixed the egg and add it to the banana. Then I added some cinnamon and coconut. I made more little pancakes in a non-stick pan. Because I can't live without too much sugar, I added also some dulce de leche as the dressing (not paleo I think). Hihi. But yes, a really easy recipe for a really delicious meal (probably more for breakfast than lunch). I recommend it.

YUMMY COURGETTES

Ker objavljam toliko slik s hrano, da se vam vsem kar sline cedijo, je edino prav, da vsake toliko objavim tudi kak recept za to (ne samo po izgledu) odlično hrano. Tokrat bom delila z vami recept za cvrte bučke (bučkine polpete), ki sem jih naredila prejšnji teden. Kljub temu, da gre za cvrto hrano, se mi zdi da se olje, v primerjavi z navadnimi "pohanimi" bučkami, tukaj sploh ne toliko vpije, še posebej če jih pustimo nekaj časa na papirju, ki posrka veliko olja ven.

Since I'm posting so many photos of food, and I know all of you get hungry when you see them, I decided to post at least some of the reciepes for my (not only by looks but also by taste) amazing food. First it's time for fried courgettes, which I made last week. Even though they are fried, they are not really greasy, because they don't suck in a lot of oil and if you put them on paper, the paper will suck out most of the oil (which is pretty different from the normal fried courgettes with bread crumbs).

Kaj sem uporabila za moj obrok bučk (jedla sem samo to, kot glavno in edino jed za kosilo, se jih pa seveda lahko uporabi kot prilogo)?
What I used for my courgette meal (I only eat the courgettes, as a main and only dish, but you can prepare them as a side dish also of course)?
Pol bučke - naribane (100g)     Half of a courgette - grated (100g)
1 jajce     1 egg
50g naribane mozzarele (ali drugega mehkega sira)     50g of grated mozzarella (or other soft cheese)
Sol     Salt
Poper     Pepper

Bučko oklupimo in naribamo ter jo nekoliko odcedimo, saj vsebuje veliko vode. Naribamo sir in ga zmešamo skupaj z jajcem ter bučko. Posolimo in popramo. V ponvi segrejemo olje za cvrtje. Ko je dovolj toplo, v ponev začnemo z jedilno žlico dajati maso iz bučk in počakamo, da se lepo naredi najprej na eni strani, nato pa obrnemo, da se še na drugi strani. Ko je narejena na obeh straneh, jo damo na papir, da vpije olje. To je pa to. Zelo preprosto in zelo odlično.

Peel and grate the courgette and drain it a little, because it contains a lot of water. Grate the cheese amd mix it with the egg and courgette. Add salt and pepper (as you like). Heat up the frying oil in the frying pan. When it's hot enough, take a tablespoon and add the mixture in the oil with the spoon. When the "balls" of mixture are ready on one side, turn them around so they can fry on both sides. When they are ready, take them out of the oil and put them on a paper on a plate, so the oil will be sucked out. That's it. Very easy and delicious.

CHEESECAKE TIME

Hej. Ker res nimam več volje za učenje (zelo naporno je "cel dan" brat knjigo o švedskem pravu v angleščini) in se mi zdi, kot da mi bo glava vsak čas eksplodirala, sem se odločila, da raje naredim kaj bolj zabavnega. In to je: končno objavim recept za mojo odlično in super enostavno skutino torto.

Tokrat sem torto delala že v tretje, in se mi je zdelo, da je čas, da recept malo priredim in jo naredim malo po svoje, kar se je izkazalo kot zelo dobra odločitev. Recept sem dobila tukaj: Okusno.je in čez poletje sem jo naredila dvakrat (mislim, da sem takrat tudi govorila o tem).

Že takrat se mi je zdela sadna obloga oziroma plast s sadjem in škrobom povsem nepotrebna, zato sem se jo odločila sedaj izpustiti in na vrh dati samo mešane gozdne sadeže z želatino. Pametna odločitev. Ne samo da je torta izgledala zelo umetniško, tudi veliko bolj okusna je bila po mojem mnenju. Verjetno tudi zaradi drugačnih sestavin, ki sem jih uporabila, saj je recimo maslo tukaj bolj slano kot doma in podobno. Aja, pa še to, torto pripravimo brez pečenja, kar je zelo praktično, še posebej za tople poletne dni (no, tega tukaj nimam več). Torej, gremo k mojemu prirejenemu receptu.

Sestavine

Podlaga:
160g digestive piškotov (doma sem uporabila petit beurre piškote, ki pa so postali na koncu pretrdi in se je torto težko rezalo, tako da priporočam digestive piškote)
125g masla

Krema:
400g sirnega namaza 
300g (tokrat sem uporabila samo 250g) pasirane skute 
100g sladkorja 
1 limona 
6 lističev želatine 
250ml sladke smetane 
1 žlica sladkorja v prahu (tokrat sem uporabila kar navadnega) 

Obloga:
250g zamrznenih mešanih goznih sadežev 
2 lističa želatine 
100ml vode (mogoče več, po občutku) 
Sladkor po okusu 

Postopek
Najprej stopimo maslo in počakamo, da se nekoliko ohladi. Ta čas zdrobimo oziroma zmeljemo piškote ter pripravimo model za torto (na dno sem vedno dala peki papir, da se je torto lažje rezalo in streglo). Zdrobljene piškote zmešamo z ohlajenim stopljenim maslom in testo dobro pregnetemo. Nato z njim obložimo dno tortnega modela. Testo damo ta čas ko delamo kremo v hladilnik. 

Želatino namočimo v hladni vodi (10 minut, lahko tudi malo več). Limono operemo, naribamo lupinico, nato pa stisnemo sok iz cele limone. V skledi zmešamo sirni namaz, skuto, sladkor in naribano limono v gladko zmes. Limonin sok v manjši kozici segrejemo in v njem raztopimo dobro ožeto želatino (6 lističev) nato pa primešamo temu še tri žlice skutne mase. To zmes primešamo k preostali skutni masi. Sladko smetano čvrto stepemo s sladkorjem v prahu in jo z metlico previdno zmešamo v skutno maso (mimogrede, tokrat sem vse delala na roke z metlico, brez mešalnika - mogoče je tudi to pripomoglo k okusnosti torte). Celotno skutno maso nato naložimo na testo v modelu. 

Zmrznjeno sadje damo v kozico, dodamo vodo ter sladkor po želji in počakamo, da se vse lepo segreje. Ko se mešanica segreje, v njej raztopimo želatino (2 lističa). Počakamo da se nekoliko ohladi, nato pa zmes polijemo po skutini mešanici v modelu. To pa je to. Torto damo čez noč v hladilnik (najbrž je tudi par ur dovolj, ampak slučajno je bilo tokrat tako, da je celo noč počivala) in naslednji dan uživamo v božanski skutini torti.

Miha je ravno danes pojedel še zadnji kos torte. Presenetljivo je zdržala vse od sobote, vendar je razlog za to zgolj dejstvo, da delam jaz moj 7 dnevni no junk food challenge in preprosto ne smem jest torte. Sem se je pa v soboto in nedeljo fajn najedla, tako da ni bilo potem prevelike želje. Torta je bila pohvaljena tudi s strani Filipinke in Francoza (Hane in Ivana), ki sta bila deležna tudi enega kosa. Pa Metka jo je tudi pohvalila seveda. No, morate probat, potem pa bodo tudi vas hvalili. ;)

Hej. I really don't feel like studying anymore (it is really exhausting to read an English book about Swedish law "whole day") and I feel like my head is going to explode any second, so I decided to do something more fun. This is: share my amazing cheesecake recipe with you. It was my third time doing the cake, so I decided to do my own variation of the recipe, which turned out to be a really great idea. I got the recipe on a Slovenian recipe page (Okusno.je) and tried it twice in the summer.

If you follow the original recipe you have to do a fruit coating with starch on top, which I though was kind of strange, so I decided to skip it this time. I just mixed different berries with some gelatin for the top of the cake. Good decision. The cake look so artistic and it tasted much better in my opinion as the two times before. Maybe also because of the different ingredients I used here (butter is saltier, etc.). Oh yeah, also, there is no baking needed for making the cheesecake, so it is very useful for hot summer days (no problem with that here anyway) and also for students without ovens in their rooms. Ok, let's go to the (modified) recipe.

Ingredients

Basis: 
160g of Digestive Cookies (at home I used butter cookies, which were too hard in the end and it wasn't easy to cut them, so I recommend the digestive cookies) 
125g of Butter

Cream: 
400g of Cream Cheese 
300g (I actually used 250g) of Cottage Cheese 
100g of Sugar 
1 Lemon 
6 leaves of Gelatin 
250ml of Whipping Cream 
1 tablespoon of Powdered Sugar (or regular one, which I used this time) 

Coating: 
250g of Frozen Mixed Berries 
2 leaves of Gelatin 
100ml of Water (maybe more, follow your instinct) 
Sugar (as much as you wish) 

Procedure
Melt the butter and wait a little for it to cool down. While waiting we crush the cookies and prepare the cake model (put some baking paper on the bottom so it will be easier to cut and serve the cake). Mix the cookie crumbles with the melted butter, knead the mixture and put in in the bottom of the cake model. Put everything in the fridge while making the cream. 

Put the gelatin leaves in cold water to soak (10 minutes, it can be a little bit more). Wash the lemon, grate the lemon zest and squeeze the juice from the whole lemon. In a bowl mix the cream cheese, cottage cheese, sugar and the lemon zest in a smooth mixture. Warm up the lemon juice in a small saucepan and melt the dried up gelatin (6 leaves) in it, add 3 tablespoons of cream and mix it. Add this mixture to the rest of the cream mixture. Whip the whipping cream with the sugar good and add it carefully with a whipping tool to the rest of the mixture (I didn't use any machines, just my hands and the whipping tool). Put the whole mixture in the cake model on top of the basis. 

Put the frozen berries in a saucepan and warm them up. Add water and sugar (if you want) and wait so everything is warm. Then melt the dried up gelatin (2 leaves) in it. Wait for it to cool down a little and then pour it on top of the cheese cream. That's all. Put the cake in the fridge over night (or for a few hours) and enjoy the delicious no-bake cheesecake the next day. 

My brother just ate the last piece of the cake today. Everybody complemented it. Just try it and enjoy the compliments (and of course the cake). ;)

Food: Kaiserschmarrn

No, this is not a made up word. This is an Austrian dish, which I love. I was making it for lunch one day this week and I finally decided to post a recipe for it, so everyone can make it and try this delicious thingy. ;)

What will you need?

2 Eggs
65g of Flour
150g of Milk
15g of Sugar
A pinch of Salt
A teaspoon of Baking Powder
A fist of Raisins soaked in warm water

Little bit of Butter for the pan

Jam, marmelade, nutella or anything sweet for the "topping"


What do you have to do?
First put the eggs, flour, milk, sugar, salt and baking powder in a bowl and mix it all together. I used a really useful Tupperware shaker, which is perfect for this.


Shake, shake, shake...


Warm up a "non-sticking" pan and melt the butter in it.


When it's really hot, put in the mixture.


Now put in the raisins.


Wait for it to bake on one side.


And then turn it around.


When you feel that it's quite done, cut it into smaller pieces.


And voila! Add some jam or anything else you love or just eat it as it is. :)

American Pancakes for Valentine's Day Lunch

Yesterday was Valentine's Day and since I was at home, I was the one in charge of making lunch. My dad wanted pancakes, so I made them. We usually make normal, thin pancakes, but yesterday I made American pancakes. You know, the thick, fluffy ones. I changed the recipe a little bit, so the pancakes actually were whole-wheat and not so sweet (who needs sugar in the pancake, if you can put a pound of Nutella on it :D) and in the end they were really fluffy and tasty and thick. Yum. And now, cause I'm such a nice girl, I'm gonna share the recipe with you.

What do you need?

  • 2 cups of white flour
  • 2 cups of whole-wheat flour
  • 4 eggs
  • 4 cups of milk
  • 1 baking powder
  • 4 teaspoons of sugar
  • 1 teaspoon of salt


What to do?

Put the flour, salt and baking powder in one bowl and mix it well. Take another two bowls. Separate the eggs and put the egg whites in one bowl and the egg yolks in the other. Beat the egg whites into snow (until they are hard and you can put the bowl upside-down over your head and it doesn't fall down). Add the sugar and milk to the egg yolks and mix well with a mixing machine. Add the mixture to the "flour mixture" and mix it well. And in the end, add the egg whites and mix everything WITH A SPATULA (IMPORTANT! They get more fluffy if you don't mix it with the mixing machine and if you use a spatula). Heat up a non-stick (teflon) pan and use a small scoop to pour the mixture to the pan. The pancakes should be small (about 10 cm wide). When bubbles appear on the top, you turn the pancake around and bake the other side until it's golden brown.

What about the topping?
You can use whatever you want: Nutella, jam, fruit, maple sirup, butter, cream...my favorite are pancakes with Nutella and bananas. :)

MACAROONS, SECOND TRY

On Thursday I bought myself this lovely kit ...

... inside the box ...

And so on Friday I decided I have to try it out. I already tried to make some macaroons last Christmas, but they didn't turn out as I hoped they would (strange texture + strange shape). So I was really hoping that this time they would be perfect (well at least good).

I used this recipe: http://youtu.be/ioEne270ISg , since I used the Lékué kit. I just made one little modification. I added some drops (2 or 3) of vanilla extract. And for the filling I used Nutella. <3
Here they are on a tray before baking (they have to rest for 30-35 minutes and if you touch them after that you will see that there is a crust on top and they don't stick to your fingers anymore).
The recipe was for 30 macaroons (60 pieces), but I made 48 of them (96 pieces). :D
And here they are after baking.

So how did they turned out? DELICIOUS. Perfect texture, perfect shape, perfect taste. Really. Specially on Saturday, when the filling (and of course the cookies) was cold and harder. They were soooooooo good! :) The secret is probably in the kit + I used a spatula for mixing (except for beating the egg whites, when I used the machine for mixing), which probably made them so fluffy and soft. :)

I was/still am so happy with the result that I will try to make them again very soon. Cause they were just YUMMY!

SUPERNATURAL DINNER BREAK

It's time to begin the studying again. Damn it. So yesterday I spend my afternoon and evening studying the theory of insurance. And in the middle of all that studying I began to feel hungry and tired and I needed a break. A healthy break, since the no junk food challenge is still in process. :)

This is what I made:

First some whole-wheat flakes with dried strawberries...

Then some dried tropical fruit (mango, papaya and pineapple)...

Adding some regular yoghurt...

And a banana...

And topping it with some more yoghurt.

DELICIOUS!


And when I was eating I was watching Supernatural. I have been obsessed with it for 2 weeks now. Oh, Dean <3 hehe.
So this was it ... my Supernatural healthy dinner. Yum yum.

CHICKEN WITH CORN



What do you need? (For 1,5 serving probably, but I was soooo hungry :P)

90g of pasta (I used Barilla Piccolini Mini Fussili)
280g of chicken breast (half of a breast)
A small tin of corn (140g I think)
150g of tomato sauce
A little bit of oil
Seasoning: salt, pepper, garlic



How to make it?


You cook pasta in salted boiling water (instructions are on the box usually). And for the sauce. First you cut the chicken breast in little pieces (cubes) and you season it with salt, pepper and garlic (I have mixture of the last two). Then you heat up a frying pan and put a little bit of oil in it. When it's hot enough you put the chicken in it and fry it. When it's done you add the tomato sauce and cook it for a minute or two and then add the corn. And when everything is done, you add the pasta to the sauce and mix it. And voilà, you have a delicious meal for lunch. :)

Apples and cinnamon always make me think of Christmas.

Yesterday I wanted something light and new for lunch and I decided I want to make fried apples. But since I never did them before it didn't turn out as I thought it would.

I think the meal I made were cooked apples, an apple soup or something like that. It was delicious! I ate the apples with some whole-wheat bread.. Yum yum. :)

And yes, apples and cinnamon together (especially cinnamon) always remind me of Christmas. I don't really know why, but it does. And I loooove Christmas. :)

So here is the recipe for my cooked apples with cinnamon.



What do you need?

3 apples (probably 2 would be enough, but I was really really REALLY hungry) - you probably should peel them, but I was jus to lazy and hungry for that :)
200ml of water
3 tea-spoons of brown sugar (probaly more if the apples are sour, but mine were really sweet)
1 tea-spoon of cinnamon



How to make it?

It couldn't be easier. You just put everything in a pot, mix it, turn the cooker on (medium heat is probably the best, because if you cook it on high heath your kitchen will not be happy with the splattering :P) and than you wait for it to cook. You mix it from time to time and when it looks ready you eat it. :) it all depends on how much you want to cook the apples and how much juice you want.



And that's all. Enjoy this pre-Christmas meal (with a little bit of cocoa powder on top). Nomnomnom. :)
